I recently purchased an amazing CSA box from my friends at Jutsu Aiki Camp Taylor Community Center. Among the fresh, in-season produce were 4 giant bundles of collard greens. Admittedly, I had no idea what to do with the collards, since I’ve never really been a big fan of the greens. So I did what I always do with intimidating vegetables – I sent them over to my culinary adventurous neighbor. Within minutes, she was back at my door with this yummy and healthy collard and berry smoothie.
Collard and Berry Smoothie
1-cup Aloe Juice (you may substitute water)
2-cups Frozen, Unsweetened Berries
1 Banana
1 Bunch Raw Collard Greens, stems removed
1-tsp Presoaked Chia Seeds (optional, or try flax seeds instead)
1-tsp Elder Berry Syrup (optional)
Blend all ingredients in a blender until smooth.
