Baked Apple Pie Oatmeal
With the weather being less than pleasant the past few days I have been constantly craving hot drinks, soups and oatmeal. So the other day I was really wanting a hot, filling meal that would also have a little sweetness to it. After a quick look in the pantry the idea for apple pie oatmeal was born. This is a really simple quick meal to bake up and would be perfect for a breakfast get together, or you could just eat it for 4 meals in a row like I did :)
Baked Apple Pie Oatmeal
2 apples, peeled cored and chopped
1 3/4 c. Irish oats
1/2 c. apple cider
3/4 c. skim milk
1 tbs melted butter
1 egg
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp ground ginger
1/3 c. honey
brown sugar for topping
Grease a baking dish and preheat the oven to 375. Peel, core and chop your apples.
Add the oats, apples and spices and mix. Add the honey to the oat mixture.
In a measuring cup or bowl stir together milk, cider and egg. Add to oatmeal mixture and stir well. Add the melted butter. Sprinkle a few spoonfuls of brown sugar over the top. Cover and bake for 30-40 minutes. Enjoy with a scoop of Greek yogurt and a drizzle of honey. You can store the leftovers in the fridge as this recipe makes enough for 4. Weight Watchers pts. 8
