Healthy Sundae: Peanut Butter Apple Parfait

This is a quick easy recipe that is great for kids for a snack in the afternoons or even for a fast breakfast.  You could easily swap the peanut butter for a soy butter if you are allergic.  This makes two servings and has a WW pts plus value of  5 pts.  We made these for breakfast one morning and they definitely satisfy that peanut butter craving that I seem to get every once in a while.
Recipe:
1 apple diced- I used pink lady, but I think granny smith would be a good choice
1 8 oz  container vanilla or honey flavored nonfat Greek yogurt
2 tbs peanut butter, I used Trader Joes Flax Seed Peanut Butter

Stir the peanut butter into the yogurt.  Spoon 1/4 into a sundae cup top with 1/4 of the apple, spoon another 1/4 of the yogurt peanut butter mixture on top and top with another 1/4 of the apple.  Repeat for the other cup. You could also sprinkle a little cinnamon on top to finish.
